  1. 3 cups Flour

  2. 1 1/2 cup Sugar

  3. 1 teaspoon Cinnamon

  4. 1 Pinch salt

  5. 1 teaspoon Baking powder

  6. 1 teaspoon Baking soda

  7. 3 cups Shredded, unpeeled zucchini

  8. 1 cup Raisins

  9. 1 cup Nuts

  10. 3 Eggs

  11. 2 teaspoons Vanilla

  12. 1 cup Oil

  1. In a large bowl, mix together the flour, sugar, cinnamon, salt, baking powder, baking soda, zucchini, raisins, and nuts. In another bowl, beat together the eggs, vanilla, and oil. Pour over flour mixture and stir until thoroughly mixed. Turn into 2 greased loaf pans. Bake at 350 for approximately 1½ hours.
