  1. Fettuccine and Asparagus with Shiitake and Smoked Bacon

  2. 6 ounces smoked bacon or pancetta, diced

  3. 4 tablespoons olive oil

  4. 6 ounces fresh shiitake mushrooms, sliced

  5. 1 pound asparagus, cut into 2 inch pieces

  6. 12 ounces fresh fettuccine

  7. 1 tablespoon fresh thyme, finely chopped

  8. 2 tablespoons fresh oregano, finely chopped

  9. Salt to taste

  10. Pepper to taste

  11. Saute bacon in skillet until crisp, remove to a plate. Drain off

  12. excess fat, then add olive oil to the skillet and cook the mushrooms

  13. until softened. Lightly blanch the asparagus. Cook the pasta briefly

  14. in boiling salted water. Drain the noodles and toss with the

  15. asparagus, bacon, shiitake and fresh herbs. Season with salt and pepper.
