  2. ZESTY FIG PASTRIES

  7. 3 c All-purpose flour

  8. 1 c Sugar

  9. 1/4 c Cornstarch

  10. 1 1/2 c Butter -- cut into 1 pieces

  11. --FILLING--

  12. 2 Eggs

  13. 1 c Brown sugar -- firmly packed

  14. 1/2 c Orange juice

  15. 3 tb Lemon juice

  16. 1 t Grated lemon peel

  17. 1 t Vanilla

  18. 2 c California dried figs

  19. -- stems removed

  20. 1 c Pitted dates

  21. 1 c Walnuts

  22. In food processor or mixer bowl, combine flour, sugar and cornstarch

  23. for pastry. Add butter and process (or mix) until dough holds

  24. together. Divide into thirds. Roll out two-thirds of dough on a

  25. 13 x 17"

  26. 350 F. oven for 15 minutes. Meanwhile, roll out

  27. remaining dough between sheets of plastic wrap or waxed paper to a

  28. 9 x 13"

  29. long strips about 1/4 inch wide. Combine eggs, brown sugar, juices,

  30. lemon peel and vanilla for filling in processor or mixer bowl. Blend

  31. well. Add figs, dates and nuts to bowl (if using mixer, then finely

  32. chop first). Process until evenly minced. Spread filling over baked

  33. pastry; top with strips of dough, crisscrossing diagonally. Return

  34. to oven and bake for 30 minutes, until pastry strips are lightly
