  5. 8 Japanese eggplants

  6. Olive oil

  7. Salt and pepper

  8. 1/2 lb Fresh mild goat cheese

  9. -(chevre)

  10. 2 ts Minced garlic

  11. 1 ts Red pepper flakes

  12. 6 Basil leaves, shredded

  13. Prepare the grill. Cut the eggplants in half

  14. lengthwise. Brush the cut edges with olive oil and season with salt and pepper. In a mixing bowl,combine

  15. the cheese, garlic, red pepper flakes, basil and a

  16. pinch of salt and blend well. Refrigerate until ready

  17. to use. Place the eggplant halves on the grill, flesh

  18. side down, and cook until almost soft. about two

  19. minutes. Remove from the grill and let cool slightly.

  20. Spread the goat cheese mixture on the warm eggplant

  21. pieces and serve at once. Serves four.
