  1. 3 pound(s) sweet potatoes , peeled and cut into 1-inch chunks

  2. 1 lemon

  3. 2/3 cup(s) buttermilk

  4. 1/4 cup(s) (light) mayonnaise

  5. 1/2 teaspoon(s) salt

  6. 1/4 teaspoon(s) pepper

  7. 3 stalk(s) celery , thinly sliced

  8. 1/4 cup(s) (minced) red onion

  9. 1/4 cup(s) (loosely packed) fresh parsley , leaves, chopped

  1. Place sweet potatoes in a large pot, add enough water to cover and bring to a boil over high heat. Reduce heat to medium-low, then cover and simmer 8 minutes, or until potatoes are just tender. Drain potatoes and let cool 10 minutes.

  2. Meanwhile, grate 1 tsp. of the lemon peel and squeeze 1 Tbsp. of lemon juice into a large bowl. Whisk in buttermilk, mayonnaise, salt and pepper. Stir in celery, onion and parsley.

  3. Add potatoes to dressing in bowl and stir gently until well coated. Cover and refrigerate until serving time.
