  1. 3 cups short-grain brown rice

  2. 4-1/2 cups water

  3. 1 tsp. kosher salt

  4. 1 cup finely-chopped fresh spinach

  5. 1/2 cup diced red pepper

  6. 1/4 cup sweetened dried cranberries

  7. 2-3 radishes, diced

  8. 1/2 cup balsamic vinaigrette salad dressing

  1. Place rice, water and salt in a medium saucepan. Bring to a boil, uncovered, over high heat. Meanwhile, heat another burner on the stove on low- to medium-low. Do not place anything on the burner yet.

  2. As soon as the rice comes to a boil, transfer it to the medium-low burner and cover it. Turn off the other burner. Let the rice simmer, covered, until all of the water is absorbed, about 50 minutes.

  3. Toss the rice with the remaining ingredients. Refrigerate until ready to serve.
