  1. 1 small onion chopped

  2. 1/4 cup butter

  3. 2 3/4 cups sauerkraut

  4. 1/4 cup tomato puree

  5. 1 large russet potatoes diced

  6. 1/2 cup cracked wheat (bulgur) fine grade

  7. 2 quarts chicken broth rich, or veal stock

  8. 1 x salt

  9. 1 x black pepper

  10. 1 each green bell pepper sliced

  11. 1 x parsley leaves*

  1. In 5 quart pot, sauté onion in butter until golden.

  2. In bowl, soak sauerkraut in water, drain and chop.

  3. Add to onions and cook until done, adding water if mixture gets too dry.

  4. Add tomato puree.

  5. Saute 5-7 minutes.

  6. Add potatoes, bulgur and stock and cook 15 minutes.

  7. Season to taste with salt and pepper.

  8. Garnish with slight green pepper and parsley.
