  1. Fresh Julienne Vegetables with Basil

  2. 1 small zucchini, seeded, julienned

  3. 1 small spanish onion, sliced thinly

  4. 1 small yellow squash, seeded, julienned

  5. 2 carrots, shredded

  6. 2 tbsp water

  7. 2 tsp margarine

  8. 1 tsp fresh basil, minced

  9. Freshly ground pepper to taste

  10. Combine the zucchini, yellow squash, carrots, onion and water in

  11. 4 to 5 minutes, or until the vegetables are tender. Add the margarine and the basil.

  12. Saute, uncovered, until almost all of the liquid is cooked off.

  13. Top with a pinch of pepper. Serve immediately. Makes 2 servings.
