  1. 2 cups sugar

  2. 2 cups water

  3. 1 1/2 cups fresh lime juice

  4. 16 fresh mint leaves Crushed Ice

  5. 2 cups white rum

  1. Stir sugar and 2 cups water in saucepan over medium-low heat until sugar dissolves (do not boil). Transfer syrup to bowl.(Can be made up to 1 week ahead. Cover and chill.) In a glass place small amount of ice, 3 tbsp syrup, 3 tbsp lime juice and 2 mint leaves. Muddle, crushing mint to release flavor. Fill glass with crushed ice then ¼ cup rum. Pour in ⅓ cup club soda and garnish with mint.
