  1. Fettuccine with Smoked Salmon

  2. 2 cups heavy cream

  3. 1 lb. fresh fettuccini in 1/4-inch wide strips or substitute dried

  4. salt

  5. 1/2 lb. smoked salmon (best quality)

  6. 1/4 cup freshly grated Parmesan cheese

  7. freshly ground black pepper

  8. In a large heavy skillet, bring the cream to the boil. Cook,

  9. stirring constantly with a wire whisk (so the cream doesn't boil

  10. 8 minutes. Cook the

  11. fettuccini in the boiling, salted water until done, but still firm

  12. to the bite. Drain well. While the pasta is cooking, stir the

  13. 2 to

  14. minutes. Add the drained fettuccini to the skillet. Toss gently.

  15. Serve with a grinding of fresh pepper over the top.
