  1. 1 medium onion

  2. 1 medium green pepper

  3. 3 medium tomato es

  4. 1/2 tspn dried thyme or 1 tspn fresh thyme

  5. 1/2 cup flour

  6. 1 tspn salt

  8. 2 to 3 lb. chicken , cut in serving pieces

  9. 1/3 cup butter

  10. 1/2 cup raisin s

  11. 1/2 cup sliced almond s

  1. Peel and chop the onion. Chop the green pepper, removing the seeds. Cut the tomatoes in quarters. If you’re using fresh thyme, chop it or snip it with a scissors. Put the flour, salt and pepper in a strong paper bag. Shake the bag to mix the ingredients. Add the chicken pieces, a few at a time. Shake until they are well-coated. Heat the butter in a large frying pan. Add the chicken pieces. Cook over medium heat until they are golden, about 5 minutes. Turn and brown the other side. Remove from the pan. Put the onion, green pepper, thyme and tomatoes into the pan. Turn the heat to low. Cook 5 minutes, stirring. Put the chicken pieces back into the pan. Cover and cook over very low heat for 45 minutes. Put the chicken pieces on a serving platter and keep it warm. Stir the raisins and almonds into the vegetables in the pan. Simmer 5 minutes, uncovered. Pour over the chicken and serve.
