  1. 1/2 cup fresh cilantro leaves (lightly packed) 1/2 teaspoon grated lime peel 1/2 teaspoon salt 1/2-1 teaspoon hot pepper sauce 8 tablespoons (1 stick) unsalted butter, softened

  1. Combine cilantro, lime peel, salt, and red pepper sauce in the bowl of food processor fitted with a metal wing blade.

  2. Process until cilantro is finely chopped; scrap the sides of bowl if necessary.

  3. Add butter. Process until combined, about 30 seconds. Transfer to container, cover and chill until serving. Or, shape into log, wrap in plastic wrap, chill, and slice to serve.
