  1. 2 (5 ounce) salmon fillets

  2. 1/3 cup pistachios , roasted kernels

  3. 1/8 teaspoon cayenne pepper

  4. 2 tablespoons cilantro

  5. olive oil

  1. Preheat oven to 350 degrees.

  2. Place an iron skillet or griddle in the oven and allow to heat while preparing the fish.

  3. Place the pistachio kernels, pepper and cilantro in the food processor bowl.

  4. Pulse several times to coarsely chop the nuts.

  5. Pour mixture into shallow bowl or dish.

  6. Wash the salmon fillets and pat dry with paper towel.

  7. Mist or drizzle olive oil lightly on both sides of fish fillets.

  8. Dip both sides of the fillets in the nut mixture, pressing down slightly.

  9. Spray the preheated skillet with non-stick cooking spray.

  10. Place fillets on skillet and mist lightly with olive oil.

  11. Bake in preheated oven for 15 to 20 minutes, or until fish flakes easily.
