  1. Flan

  2. Makes 6 servings.

  3. 6 Tbsp. sugar

  4. 6 eggs

  5. 1 tsp. vanilla extract

  6. 1 strip lemon peel

  7. 1 cinnamon stick

  8. 2 cups milk

  9. Pinch salt

  10. Caramelized sugar (follows)

  11. Boil milk with lemon peel and cinnamon stick. Lightly beat eggs

  12. with wire whisk. Blend in sugar, vanilla extract, and salt. Add

  13. milk gradually; strain. Pour into ovenproof custard cups with

  14. caramelized sugar in bottoms. Place cups in pan of hot water (2

  15. 1 hour at

  16. 300. Never let water

  17. boil or custard will be filled with holes. Remove from pan and cool

  18. in refrigerator. To serve, unmold by pressing edges of custard with

  19. spoon to break away from cup, then turning upside down. Spoon

  20. caramelized sugar from bottoms of cups over top of each custard.

  21. Caramelized Sugar

  22. 1 cup sugar

  23. 1 Tbsp. water

  24. Place sugar and water in small skillet. Cook over med. heat, stirring

  25. constantly, until sugar is golden. Pour immediately into 6 ovenproof

  26. custard cups.
