  1. 2 Boneless skinless chicken breasts - cut into 1" strips

  2. Prepackaged fajita seasoning of choice

  3. 1/2 cup 118ml Water

  4. 1 cup 146g / 5.1oz Shredded Colby-Jack cheese - divided

  5. 4 cups 250g / 8.8oz Flour tortillas (large)

  6. 1 cup 237ml Shredded lettuce

  7. Pico de Gallo - (see recipe)

  8. Applebee's Mexi-Ranch Dressing - (see recipe)

  1. Mix 1/2 cup water and fajita seasoning and pour over chicken in a medium skillet. Cook over medium-high heat until chicken is no longer pink, about 5 to 7 minutes. Remove from heat and set aside to cool.

  2. Meanwhile, place 2 tortillas on a large plate and top each with 1/2 cup cheese. Top each with additional tortilla and microwave, covered, for 1 minute. Top each tortilla with 1/2 the chicken, lettuce and Pico de Gallo. Fold in the sides of each tortilla and roll. Cut each tortilla in half and serve with Applebee's Mexi-Ranch Dressing for dipping sauce.
