  1. 1 red onion , minced

  2. 1 stalk celery ,minced

  3. 3 carrot s, finely chopped

  4. 6 tbsp olive oil

  5. 3/4 lb ground beef

  6. 1 italian sausage (sweet or hot - your choice) removed from casing and crumbled

  7. 1 glass white wine

  8. 16 oz peeled crushed plum tomatoes

  9. 1 tsp ground pepper

  10. 1 tsp salt

  1. Heat oil in pan, add minced and chopped onion, celery and carrot. Cook on low to medium heat slowly, stirring often. Add meats after about 15 minutes. Stir meat in and allow to cook slowly for next 15-20 minutes til meats are brown and done. Add wine and cook allowing it to evaporate partially. Add tomatoes and salt-pepper/ Cook over low heat about 1½ hours stirring occasionally allowing sauce to thicken. If needed you may add water or stock to thin out a bit during cooking.
