  2. TOFU NOODLE SOUP

  7. 1/2 lb Firm tofu

  8. 2 c Noodles made without egg

  9. 5 c Vegetable stock or bouillon

  10. 1 md Carrot -- chopped

  11. 1 Celery rib, with leaves

  12. -- chopped 1 md Onion -- chopped

  13. 2 Garlic cloves -- minced

  14. 1/2 ts Dried marjoram

  15. 1/2 ts Dried thyme

  16. 1/2 ts Rubbed sage

  17. 1 Bay leaf

  18. 1 t Fine sea salt

  19. 1/4 ts Freshly ground black pepper

  20. 1 lb Fresh peas -- shelled, -OR-

  21. 1 c -(thawed) frozen peas

  22. 1/2 c Finely chopped fresh parsley

  23. Drain and rinse the tofu. Put the tofu in a plastic

  24. bag or container, close it tightly, and freeze until

  25. the tofu is frozen hard. Remove the bag or container

  26. from the freezer and put it in a bowl of hot water, or let the tofu thaw at room temperature. Gently squeeze

  27. the water from the tofu, using your hands, and then

  28. squeeze it dry between two towels. Cut the tofu into 1/2-inch cubes. In a large pot of lightly salted boiling water, cook

  31. Drain, rinse well under cold running water, and drain

  32. again.

  33. In a large pot, combine the vegetable stock, carrot,

  34. celery, onion, garlic, marjoram, thyme, sage, bay

  35. leaf, salt, and pepper. Bring to a simmer over medium

  36. heat and cook for 5 minutes.

  37. Stir in the cubed tofu, peas, and parsley, return to a

  38. simmer, and cook for 2 minutes. Stir in the cooked

  39. noodles and bring just to a simmer. Remove the bay

  40. leaf and serve immediately.
