  1. 4 6 oz. filets flounder, or 1/2 c Pecan halves

  2. Garnish

  3. 4 tb Dry white wine

  4. Vinaigrette

  5. Calvert's cedar street peca

  6. Chive mustard

  7. 2 tb Calvert's cedar street

  8. Any delicate fish

  9. 8 Thin lemon slices

  1. In a stainless steel or glass pan, place flounder filets which have been spread with Calvert's Cedar Street Chive Mustard.

  2. Pour 1/2 cup Calvert's Cedar Street Pecan Vinaigrette over filets and marinate for 1 hour, turning once.

  3. Place each filet of flounder on a rectangle of aluminum foil large enough to encase it.

  4. Top each marinated filet with another tsp.

  5. of Pecan Vinaigrette, two slices of lemon, and 1/4 of the pecan halves.

  6. Sprinkle with 1 tbs.

  7. of dry white wine.

  8. Seal foil to envelop fish.

  9. Bake in 375 degree preheated oven for 20 minutes.

  10. Place flounder with garnish on individual, warmed plates.
