  1. 1 c Chopped dates

  2. 1/2 c Amaranth

  3. 1 c Boiling water

  4. 2 Eggs

  5. 1/2 c Honey

  6. 1/4 c Butter, melted

  7. 2 c Whole wheat flour

  8. 2 ts Baking powder

  9. 1 c Chopped pecans

  10. 1 ts Vanilla extract

  1. Soak dates and amaranth in boiling water.

  2. Beat eggs well, add honey and butter; beat well.

  3. Stir in all remaining ingredients mixing well.

  4. Pour into an oiled loaf pan.

  5. Bake at 350 F for 1 hour and 15 min.
