  2. 2 tablespoons Dijon mustard

  3. 2 tablespoons honey

  4. 1 tablespoon lemon juice

  5. white pepper and salt to taste

  6. 8 boneless, skinless chicken breasts

  7. 2 cups fresh raspberries

  1. Prepare and preheat grill. Brush rack with vegetable oil. Mix raspberry preserves, mustard, honey, lemon juice, pepper, and salt. Place chicken on grill, cover and cook for 8-9 minutes per side, brushing frequently with the jam mixture, until chicken registers 160 degrees F on an instant read thermometer. Discard remaining honey mixture and serve chicken with the fresh raspberries.
