  1. 4 Chicken breasts - skinned

  2. 1 Onion (small)

  3. 6 tablespoons 90ml Parmesan cheese - grated

  4. 1/2 teaspoon 2 1/2ml Rosemary - crushed

  5. 3 tablespoons 45ml Flour

  6. 1 Stewed Italian tomatoes

  7. 1 cup 237ml Mushrooms - sliced (14 1/2oz)

  1. Recipe Instructions Flatten chicken slightly. Coat with 4 T cheese and then flour. Salt and pepper to taste. In skillet cook chicken in oil over medium-high heat until done. Remove to serving dish; keep warm. In same skillet, cook mushrooms, onion, and rosemary until soft. Add tomatoes; cook, uncovered, over medium-high heat until thickened.
