  1. WHITE LAYER CAKE (3 egg whites)

  2. 2 c. sifted cake flour

  3. 3t. baking powder

  4. 3/4 t. salt

  5. 1/2 c. shortening

  6. 1 c. granulated sugar

  7. 1 c. minus

  8. 2 T. milk

  9. 1 t. vanilla

  10. 3 egg whites

  11. 1/4 c. granulated sugar

  12. 375 degrees F. Line two

  13. 8" layer pans,

  14. 11/4" deep,

  15. on bottom with waxed paper; grease paper. Sift together 3 times,

  16. flour, baking power, salt. With back of spoon, work shortening

  17. against sides os mixing bowl until creamy. Slowly add 1 cup sugar,

  18. continuing to work until light and creamy. To this, add flour

  19. mixture, alternately with milk, in small amounts, beginning and ending with flour, and beating smooth after each addition. Add

  20. vanilla. Beat egg whites with hand or electric beater until they

  21. form moist peaks. Add 1/4 c. sugar slowly, beating after each addition until sugar is blended. Beat well into batter with spoon.

  22. Turn into pans. Bake in moderately hot oven of 375 degrees F.

  23. 25 minutes, or until done. Cool on wire cake rack

  24. minutes before removing from pan and removing paper.
