  1. 4 tablespoons butter, divided

  2. 2 tablespoons vegetable oil

  3. 2 cups cooked sweet potatoes or yams, sliced

  4. 1/2 inch thick 2 ripe plantains, peeled and chopped

  5. 1/2 cup chopped green onion

  6. 1/2 cup chopped cooked ham

  7. 1 clove garlic, minced

  8. 1/2 cup chicken or beef broth

  9. 1 tablespoons chopped fresh thyme Salt and pepper to taste

  1. In a large skillet over medium heat, heat 2 tablespoons butter and the oil until hot. Add sweet potatoes, plantains, green onion, ham and garlic. Cook, stirring frequently, about 5 minutes or until plantains begin to soften.

  2. Add broth; cover and simmer 10 minutes or until plantains are tender. Add remaining butter, thyme and salt and pepper to taste. Stir until butter melts, serve immediately.
