  2. 4 slices bacon, cut into 1/2-inch pieces

  3. 1 onion, chopped

  4. 3 carrots, sliced

  5. 3 stalks celery, sliced

  6. 1 bay leaf

  7. 1/4 to 1 tsp. red pepper flakes, crushed

  8. 1 tsp. tarragon

  9. 1 large can peeled tomatoes, quartered

  10. 4 cups canned clam juice

  11. 3 potatoes, peeled and cubed

  12. Fresh parsley, chopped

  13. 2 cans clams, chopped

  1. In heavy skillet, cook the bacon over medium heat until fat is released. Add the onion and saute until soft. Add carrots and celery and stir to coat. Add bay leaf, red pepper flakes and tarragon. Cook vegetables and seasonings until tender. Add tomatoes and clam juice. Bring to a simmer. Add potatoes and simmer until tender, about 20 minutes. Add parsley and clams. Simmer for 10 minutes more and serve.
