  1. 2 Granny Smith apples, peeled, cored,

  2. finely chopped 1/3 cup raisins

  3. 1/3 cup brown sugar

  4. 1 teaspoon ground cinnamon

  5. 1/2 teaspoon ground nutmeg

  6. 3 sheets puff pastry

  7. 30g butter, melted

  8. Makes 24

  1. Preheat oven to moderate, 180°C . Lightly grease and line an oven tray with baking paper.

  2. In a medium bowl, combine apple, raisins, sugar, cinnamon and nutmeg. Sprinkle 1/3 mixture evenly over one pastry sheet. Roll up firmly to enclose filling and form a log. Repeat with remaining pastry and ingredients.

  3. Cut each log into 8 even slices and place side by side, cut side down, on tray. Cover with a damp tea towel and rest for 10 minutes.

  4. Brush sides with melted butter and bake 20-25 minutes, until puffed and golden brown.

  5. Cook's tip These can be prepared to end of step 2 and frozen. Simply slice and bake as required.
