  1. 1 Red leaf lettuce

  2. 1 Green leaf lettuce

  3. 1 teaspoon 5ml Lemon juice

  4. 1 Crisp red apple - thinly sliced

  5. (such as McIntosh or Paula Red)

  6. 1 Anjou pear - thinly sliced

  7. 2 tablespoons 30ml Apple cider

  8. 2 tablespoons 30ml Cider vinegar

  9. 1 teaspoon 5ml Sugar

  10. 1/3 cup 78ml Extra-virgin olive oil

  11. Coarse salt - to taste

  12. Freshly-ground black pepper - to taste

  13. 8 oz 227g Sharp cheddar - thinly sliced

  1. Coarsely chop lettuce. Squeeze a little lemon juice over apples and pears and toss with greens.

  2. Combine cider, vinegar and sugar in a bowl and whisk in oil in a slow stream.

  3. Pour dressing over salad and season salad with salt and pepper and toss salad to combine and coat evenly. Serve salad with a garnish of sliced sharp cheddar cheese.

  4. This recipe yields 4 to 6 servings.
