  5. 4.00 md Turnips; peeled

  6. - and sliced paper thin

  7. 1.00 md Yellow onion

  8. - peeled and finely sliced

  9. 4.00 tb Melted butter

  10. 0 1/20 c Whipping cream

  11. 4.00 Anchovy fillets

  12. - finely chopped 0 1/4 ts Nutmeg

  13. - preferably freshly ground

  14. 0 1/4 ts Freshly ground pepper

  15. 0 1/20 c Crumbled Roquefort

  16. - OR Stilton

  17. - or other blue cheese

  18. PREHEAT OVEN TO 375F. Toss together the turnips and onion with the

  19. melted butter and place in a 9-inch square or round baking dish.

  20. Cover tightly and place in preheated oven for 30 minutes. In a small

  21. pot over medium heat, combine cream, anchovies, nutmeg and pepper.

  22. Bring to a boil and let cook 1 minute. Remove turnips from oven,

  23. remove cover and pour the cream mixture over them. Sprinkle with

  24. 20 to

  25. minutes. If the gratin is golden brown, it's ready to serve. If not,

  26. preheat broiler. Place gratin under hot broiler about 3 minutes to

  27. brown the top before serving. May be prepared a couple of hours in

  28. advance to this point and kept covered at room temperature.
