  1. Indonesian Fish Curry

  2. Serves 4 1 1/2 lb cod or coley fillets

  3. pinch salt and pepper

  4. 2 tablespoons plain flour

  5. 1 onion

  6. 1 large cooking apple

  7. 1 tablespoon lemon juice

  8. 2 oz butter

  9. 2 tablespoons oil

  10. 2 tablespoons curry powder

  11. 1 pint stock

  12. 2 tablespoons sultanas

  13. 2 tablespoons cornflour

  14. 2 oz split almonds

  15. Cut fish into pieces, sprinkle with salt and coat with flour. Peel

  16. and slice onion. Peel, core and slice apple and sprinkle with lemon

  17. juice.

  18. Heat the butter and oil in a flameproof casserole. Add curry powder

  19. and onion and fry for 5 minutes. Add fish and cook for a few minutes

  20. on all sides. Add apple slices and cook for 3 minutes. Pour stock

  21. into casserole and add sultanas. Blend cornflour with a little

  22. stock or water and stir in. Bring to the boil and simmer for 10-15

  23. minutes. Add almonds and cook for a further 2 minutes. Taste and adjust seasoning and serve.
