  1. 1 lb green beans

  2. 1 lb potato olive oil (1 to 2 tablespoons) sliced black olives

  3. 1 garlic clove , minced

  4. 1/4 teaspoon oregano

  5. 1/4 teaspoon parsley

  6. 1/4 teaspoon sweet basil

  7. 1 dash red pepper flakes salt and pepper

  1. Remove 'tails' from the green beans, cut them into 2 inch lengths, and simmer them until just soft.

  2. Peel the potatoes, cut in 2cm chunks, and boil gently until cooked but not falling to pieces.

  3. Allow the potatoes and beans to cool.

  4. Combine all ingredients in a bowl and chill for 2 hours. ?
