  1. 2 Celery stalks - chopped

  2. 1 lb 454g / 16oz Scallops - sliced

  3. 2 Apples - peeled

  4. 3 tablespoons 45ml Margarine

  5. Lemon

  1. Coarsely chop celery, and slice scallops. Peel and quarter apples.

  2. Heat margarine in heavy skillet over high heat and stir fry celery for 2 minutes.

  3. Add scallops, sprinkling with juice from half the lemon.

  4. Coarsely cut apple pieces into mixture, stirring constantly, for another 2-3 minutes, adding more margarine if needed.

  5. Sprinkle with juice from remaining half of lemon, and serve.
