  1. 1 1/2 Pound chicken ( you can use a bigger one for the family)

  2. 2 tbs of All spice freshly ground ( freshly ground is the key)

  3. 4 cloves of garlic

  4. 3 whole scallions chopped

  5. 2 tbs of fresh thyme

  6. 1 inch stick of cinnamon

  7. 1/2 tsp of ground nutmeg

  8. 2 tbs of brown sugar

  9. 1 tsp black peppercorns

  10. 1 fresh lime juice

  11. 1/2 tbs of nutmeg

  12. 2 scotch bonnet peppers ( de-seeded) add more if you like it hot hot hot.

  13. 2 black cloves

  14. 1 orange salt to taste

  15. 5 potatoes

  16. 2 onions thickly cut

  1. How to make it Brine the Chicken for about 3 hours with the slices of orange and a lot of salt Hang and let air dry for about an hour Mix all the above ingredients except for the potatoes and the thickly sliced onions in a food processor Rub the marinade over and inside the chicken as in between the flesh and the skin Put it in a pan and stick it in the fridge.. let marinate and air dry overnight Put it in your baking pan Largely cube the potatoes and mix them with the onions Arrange them around the chicken and stick it in your preheated oven ( 400 degrees F) Lower the temperature to 325 and cook for a good 45 mins Stick a fork in the thigh and see if the juices runs clear Cool for 5 mins before serving with lemon (optional), Rice and peas or bread * Serve with a severely chilled bottle of Prosecco, it helps to cut the spice a bit I have this contraption from the 1940's that keeps the chicken standing while im baking it.. Ideally you would use a wood fired grill to cook it.. but my tiny fireplace grill is not powerful enough too cook a whole chicken completely.. if you have a outdoor grill then please go ahead and use it.. a rotisiere on the grill would be ideal as well.
