  1. 1 1/2 pound(s) red potatoes

  2. 1 clove(s) garlic

  3. 1/2 cup(s) low-fat milk (1%)

  4. 1 teaspoon(s) salt

  5. 1 tablespoon(s) choppe parsley

  1. Cut unpeeled potatoes into 1 1/2-inch chunks; peel garlic clove and cut lengthwise in half. In 3-quart saucepan over high heat, heat potatoes, garlic, and enough water to cover to boiling. Reduce heat to low; cover and simmer 10 minutes or until potatoes are very tender; drain.

  2. Return potatoes and garlic to saucepan. With potato masher, mash potatoes and garlic with milk and salt until smooth. Stir in chopped parsley; heat through.
