  1. 1/3 cup olive oil

  2. 2 teaspoons grated lemon zest

  3. 2 tablespoons chopped fresh mint

  4. 1/2 teaspoon kosher salt

  5. 1/4 teaspoon freshly ground black pepper

  6. 6-6oz salmon fillets garnish: cilantro or mint sprigs

  1. In a mixing bowl, whisk together, olive oil, lemon zest, mint , salt and pepper. rub the salmon with the marinade and marinate for 1 hour. Make the warm basil cream and have the salsa ready. Prepare a charcoal fire or preheat the brtoiler. Tril salmon over hot coats until done--4-5 minutes on each side. To serve, spoon a few tablespoons of warm asil cream on each plate. Place a salmon fillet on top, followed by a heaping tablespoon or two the te roasted white corn salsa. Garnish with herb sprigs and serve immediately
