  1. 1 tsp olive oil

  2. 2 x 160g salmon fillets

  3. POTATO SALAD:

  4. 400g baby new potatoes

  5. cup mixed herbs: parsley, dill and chives

  6. tsp lemon zest, finely grated

  7. 2 tbsp sour cream

  8. Sea salt and cracked pepper

  9. bunch rocket leaves

  10. Lime wedges to serve

  1. Cook the potatoes in a pot of boiling water until tender, then drain and quarter. Meanwhile, heat the oil in a frying pan over medium heat. Add the salmon fillets, skin side down and cool for 3 minutes, then turn and cook for another 3 minutes or until cooked to your liking. Place the potatoes, herbs, lemon zest, sour cream, and some salt and pepper in a bowl and toss to combine. To serve, divide the rocket leaves between two plates, top with the potato salad, place a salmon filet on top and add a wedge of lime. Serves 2.
