  1. 2 cups flour

  2. 2 teaspoons baking soda

  3. 1 teaspoon salt

  4. 1/4 teaspoon baking powder

  5. 3 teaspoons cinnamon

  6. 3 eggs

  7. 1 cup vegetable oil

  8. 1 1/2 cups sugar

  9. 2 cups zucchini, grated

  10. 2 teaspoons vanilla

  11. 1 cup walnuts , chopped

  12. 1 cup raisins

  1. Directions :

  2. Preheat your oven to 350ºF.

  3. Sift flour, baking soda, salt, baking powder and cinnamon onto waxed paper.

  4. Combine eggs, oil, sugar, zucchini and vanilla in a large mixing bowl. Beat until well mixed. Add the flour mixture from the waxed paper. Mix until smooth. Add raisins and nuts and mix. Pour mixture into a greased 13x9x2" pan.

  5. Bake at 350ºF for 40 minutes or until the center springs back when lightly touched with your fingertip or toothpick inserted in center comes out clean.

  6. Cool in pan on wire rack.

  7. Cut into 12 to 16 pieces.
