  1. 1-1/2 cups sugar

  2. 1/2 cup water

  3. 3 cups cranberries (12 ounces)

  4. 2 medium pears, cored and cubed (2 cups)

  5. 1/2 tsp. ground nutmeg

  6. 1/2 tsp. ground allspice

  7. 4 inches stick cinnamon

  8. Bay leaves

  9. Lemon peel

  1. In a large saucepan, combine sugar and water. Bring to boiling, stirring to dissolve sugar. Boil rapidly, uncovered, for 5 minutes.

  2. Add cranberries, pears, nutmeg, allspice, and cinnamon. Return to boiling. Cook 3 to 4 minutes or till cranberry skins pop, stirring often. Remove from heat. Transfer to a bowl. Cover and chill.

  3. Before serving, remove cinnamon stick. If desired, garnish with bay leaves and lemon peel.
