  1. 2 large sweet potatoes, peeled and sliced into chunks

  2. 1 onion, peeled and sliced

  3. 2 tablespoons of olive oil

  4. coarse salt

  5. fresh thyme leaves

  1. Heat oven to 200 degrees C.

  2. Toss the sweet potatoes with oil in a baking dish. Sprinkle over some coarse salt. Cover and bake for half an hour, then remove cover and allow to crisp up for 10 - 20 minutes.

  3. Sprinkle over some fresh thyme leaves before serving.
