  1. 1 head cauliflower, florets snipped off and rinsed

  2. 1/2 cup roasted red bell pepper hummus

  3. 3 huge handfuls of fresh spinach

  4. 1 tsp curry powder

  5. 1 tablespoon apple cider vinegar

  6. 1 tbsp extra virgin olive oil

  7. Salt and pepper, to taste

  1. Directions Steam cauliflower until tender and drain (in a pan, bring about 1/4″ water to a boil. Add 1/2 tsp salt and cauliflower florets. Steam for about 8 minutes, or until tender.)

  2. With the pan on high, add olive oil. When the oil is hot, add cauliflower back into the pan. Season with a pinch of salt, fresh ground black pepper, and curry powder and fresh spinach. Cook until the spinach is wilted. Add vinegar.

  3. Finally, add the hummus, and mix well. When the hummus is warm, add final seasonings and serve.
