  1. 2-1/2 lbs. potatoes

  2. 1 Tbsp. olive oil

  3. kosher salt and freshly-ground pepper, to taste

  4. 4 slices bacon

  5. 1 cup shredded cheddar cheese

  1. Preheat oven to 400 degrees F.

  2. Peel potatoes and cut into 1-inch pieces. Place in a large, heavy roasting pan or a 9 x 13 pan.

  3. Drizzle with olive oil and sprinkle with salt and pepper. Toss well.

  4. Roast 35-40 minutes until potatoes are tender.

  5. Meanwhile, fry bacon until crisp. Drain on paper towels.

  6. Remove potatoes from oven. Sprinkle shredded cheese over potatoes. Crumble bacon on top.

  7. Return to oven for 5 minutes until cheese is melted.

  8. Makes 6-8 servings.
