  1. 1/2 cup onion, chopped

  2. 1cup whole-grain bread crumbs

  3. 1 1/2 pounds firm tofu

  4. 1/2 cup parsley, chopped

  5. 2 stalks celery, fine chop

  6. 1 tablespoon poultry seasoning

  7. 1/2 cup chopped water chestnuts

  8. 3 tablespoons soy sauce

  1. Preheat oven to 350 degrees. Mix all ingredients together. Press mixture into a loaf pan that has been coated with cooking spray. Bake one hour. Let cool for 15 minutes before removing from pan. Slice and serve warm. Also makes great sandwiches.
