  1. 6 desiree potatoes (1.1kg), peeled, halved horizontally

  2. 40g butter, melted

  3. 2 tablespoons olive oil

  4. 1/4 cup (25g) packaged breadcrumbs

  5. 1/2 cup (60g) finely grated cheddar cheese

  1. Preheat oven to moderate.

  2. Place one potato half, cut-side down, on chopping board; place a chopstick on board along each side of potato. Slice potato thinly, cutting through to chopsticks to prevent cutting all the way through. Repeat with remaining potato halves.

  3. Coat potato halves in combined butter and oil in medium baking dish; place, rounded-side up, in single layer. Roast, uncovered, in moderate oven 45 minutes, brushing frequently with oil mixture. Continue roasting without brushing about 15 minutes or until potatoes are cooked through.

  4. Sprinkle combined breadcrumbs and cheese over potatoes; roast, uncovered, in moderate oven about 10 minutes or until topping is browned lightly.
