  1. 3 large eggs

  2. 473.18 ml buttermilk

  3. 59.14 ml butter , melted and cooled

  4. 591.47 ml all-purpose flour

  5. 4.92 ml baking soda

  6. 14.79 ml cinnamon

  7. 14.79 ml nutmeg

  8. 4.92 ml ground cloves

  9. 4.92 ml ground ginger

  10. 4 granny smith apples or 4 golden delicious apples , peeled and cut into 1/4 inch thick slices

  11. 2.46 ml cinnamon

  12. 2.46 ml nutmeg

  13. 1 1/53 ml ground cloves

  14. 59.14 ml packed light brown sugar

  15. 59.14 ml apple juice or 59.14 ml apple cider

  16. 59.14 ml butter , melted

  1. In a medium bowl, combine eggs and brown sugar. Stir in buttermilk and butter. Sift together flour, baking soda, cinnamon, nutmeg, cloves and ginger into a large bowl.

  2. Stir egg mixture into flour mixture (do not overmix)- batter will be somewhat lumpy. Add more buttermilk, if needed (batter should be thick).

  3. Cook pancakes on a preheated, greased griddle or skillet until golden brown on both sides. Serve pancakes topped with spicy apples and maple syrup if desired.

  4. For the apples: In a small saucepan over low heat, combine all ingredients. Cook, stirring frequently, until apples are tender but not mushy.
