  1. 4 potatoes, peeled and grated

  2. 2 cups grated cheese

  3. Handful of finely chopped chives

  4. 1tbsp olive or vegetable oil

  5. Salt and pepper

  6. Creme fraiche, ketchup or hot sauce

  1. Bring a pan of water to the boil and add the grated potato. Cook for 1 min only. Drain and run under cold water. Pat dry with a clean towel.

  2. Mix the potato, cheese and chives together in large bowl.

  3. Heat the oil in frying pan. Take a handful of the potato mix and flatten into a rough pancake shape. Fry for 5 mins on each side.

  4. Serve the potato pancakes with crème fraîche or ketchup. They're delicious with bacon, too.
