  1. Preheat oven to 205 degrees F, 205 is not a typo.

  2. Place the roast on a rack in a baking pan. Do not trim the fat.

  3. Bake the roast uncovered at 205 degrees F until a temperature probe reads 175 degrees, about 10 hours.

  4. When cool enough to handle, remove the bone. The bone should easily slip away from the tender meat. Pull the pork apart into long shreds using two forks, or chop.

  5. Make the sauce. Mix equal parts cider vinegar and water. Add red and black pepper to taste. This in the Eastern Carolinas. In the Western Carolinas, they also add a little ketchup, a very little.

  6. Serve the BBQ with the sauce so people can add the sauce to their taste. Serve with BBQ slaw which is chopped cabbage, BBQ sauce, and sugar to taste. No mayo. Do not serve with onion.
