  1. 1 1/2 cups gluten free flour blend, I like Whole Foods

  2. 365 brand mix

  3. 1 cup turbinado or unprocessed sugar , you could probably use brown

  4. heaping 1/4 cup gluten free cocoa powder

  5. 1 1/2 teaspoon baking soda

  6. 1/2 teaspoon salt

  7. 1/3 cup canola oil

  8. 1 teaspoon vanilla extract

  9. 1 teaspoon cider vinegar

  10. 1 cup water

  1. Preheat oven to 350 degrees. Line a dozen cup muffin pan with paper liners.

  2. Sift together the dry ingredients.

  3. Add the oil, vanilla, vinegar, and water. Mix together till smooth.

  4. Pour into lined muffin cups, filling almost all the way full. (gluten free cakes usually don't fluff like regular cakes)

  5. Bake for 20-26 minutes, or until center is done.

  6. Remove from oven and allow to cool before frosting.
