  1. 215g plain flour

  2. 1tsp baking soda

  3. tsp baking powder

  4. tsp salt

  5. 125ml hot water

  6. 50g cocoa

  7. 125ml cold water

  8. 100g unsalted butter

  9. 280g caster sugar

  10. 2 eggs

  11. 2tsp vanilla

  1. Sift together flour, baking soda, baking powder and salt In a separate bowl whisk together hot water and cocoa into a smooth paste. Add cold water and whisk until combined.

  2. Cream butter for 1 minute, add caster sugar and one egg. Beat until light. Add other egg and beat then stir in vanilla.

  3. Add ½ the flour to creamed mixture and beat on low until combined.

  4. Add ½ cocoa mix and beat Repeat with remaining flour and cocoa but don’t over beat.

  5. Half fill cupcake papers.

  6. Bake for 25mins at 170c or until springy Cool in tin for 5 mins before removing to wire cooling rack.
