  1. 1000 grams veal from the lower side of the neck cut into 5cm (2 inch) pieces

  2. 1 tablespoon salt

  3. 80ml olive oil

  4. 1 large red onion, roughly chopped

  5. 2 large carrots, sliced into 1 1/5cm (1/2 inch) rounds

  6. 4 allspice berries

  7. 8 grains black pepper

  8. 120ml dry white wine

  9. 500ml water or vegetable stock

  1. Sprinkle the veal with salt. Heat the olive oil in heavy large pot over high heat. Add veal and brown well on all sides, about 5 minutes. Add the onion and carrots until they become softer. Then also add the allspice berries and the grains of pepper plus the wine.

  2. After 5 minutes, reduce the heat and pour the water or the stock in the pot. Cook at moderate temperature for 1 hour and 30 minutes. If more water is needed, add it during the cooking process. Taste and sprinkle with salt if you want more.

  3. The meat should be tender and the sauce thick.
