  1. 6 eggs, separated into yolks and whites

  2. 250g caster sugar

  3. 250g dark chocolate, grated

  4. 2 tablespoons breadcrumbs

  5. 120g plain flour, sieved

  6. 1 teaspoon baking powder

  7. 1 pinch salt

  8. 1 teaspoon vanilla extract

  9. 1/2 teaspoon allspice

  10. 1/2 teaspoon cinnamon

  1. Place a pot of water on to boil. You will also need to lightly grease a 1 pound pudding bowl.

  2. Beat the egg yolks and sugar in a large bowl until light and fluffy. Add the grated chocolate, breadcrumbs, sifted flour, baking powder, salt, allspice and cinnamon; stir to blend well.

  3. Whip the egg whites until stiff; fold gently into the chocolate mixture.

  4. Pour the mixture into the greased pudding bowl; place in the pot of boiling water making sure the bottom of the bowl doesn't touch the bottom of the pot - you can set it on a round cooling rack if you have one. Steam for one hour, topping up the water if necessary.

  5. Turn out onto a serving plate and serve with whipped cream or ice cream.
