  1. 1/2 cup raw caster sugar

  2. cup water

  3. cup lemon juice

  4. 6 frozen raspberries

  5. Lemonade or soda water

  6. 8 scoops vanilla ice-cream

  7. Small saucepan

  8. Fine sieve

  9. 8 x 3/4-cup capacity serving glasses

  10. Ice-cream scoop

  11. 8 straws

  12. 8 parfait teaspoons

  1. Place sugar, water, lemon juice and raspberries in saucepan over medium-high heat. Bring to a simmer and cook gently for 2 to 3 mins, or until sugar has dissolved. Remove from heat and refrigerate until cold.

  2. Strain cordial through sieve to remove pulp. Divide cordial into 8 glasses (1½ tbsp per glass) and top with lemonade or soda water until glass is ¾ full. Stir to combine.

  3. Serve Drop 1 scoop of ice-cream into each glass, and serve with a straw and parfait spoon.
