  1. 2 tablespoons olive oil

  2. 1/2 onion , chopped

  3. 1 (15 ounce) can chickpeas , drained & rinsed

  4. 1 (15 ounce) can diced tomatoes

  5. 1 tablespoon fresh Italian parsley , finely chopped

  6. 1 tablespoon fresh cilantro , finely chopped

  7. 1/4 teaspoon salt

  8. 1/4 teaspoon black pepper

  9. 1/4 teaspoon harissa (cayenne pepper can be substituted)

  10. 1/4 teaspoon cinnamon

  11. 1/4 teaspoon turmeric

  12. 1/4 teaspoon ginger

  13. 1/4 teaspoon cumin

  1. Pour the oil into a tagine (or shallow casserole) & cook the onions for several minutes.

  2. Next place all the rest of the ingredients in with the onions & stir. Cover & cook over low heat for 30 minutes.

  3. Serve hot with thick bread.
